Move over, Chelsea bun. Step aside, hot cross bun. There’s a new bun in town, and it’s worth queuing for. Introducing the Mayfair Bun—a modern take on Britain’s long-standing love affair with buns, crafted in the heart of Mayfair at London’s oldest hotel. Available exclusively at Brown’s Hotel, Mayfair.

To honour the hotel's iconic address, only 33 buns will be available each day at 11am - each featuring 33 delicate layers of pastry in a nod to 33 Albemarle Street. As timeless as Mayfair itself, this is not just another bun. It’s a moment of indulgence, a piece of history, and an invitation to experience tradition in a new way. 

The honey used in the Mayfair Bun is sourced from the award-winning Rhug Estate in North Wales, where bees forage freely among wildflowers in the Dee Valley. The result is a naturally floral honey with subtle notes of citrus and heather. Rhug Estate follows sustainable beekeeping practices, and their limited-edition honey is produced only as nature allows—guided by the bees themselves.

Inspired by centuries of British baking tradition yet entirely its own, the Mayfair Bun is a delicate balance of indulgence and restraint. Baked in beeswax, draped in honey, and dusted with floral bee pollen, it offers a subtle sweetness that lingers without overpowering. Light, airy, and designed to be torn and shared (or savoured solo), this bun is as refined as its namesake and as playful as the city that surrounds it. 

Buns have been a beloved British staple for centuries—each region offering its own take, from the spiced Chelsea bun to the saffron-laced Cornish variety, the Bath bun favoured by Jane Austen, and the much-loved Easter hot cross bun. The Mayfair Bun pays homage to this rich culinary heritage while bringing something entirely fresh to the table.

The Mayfair Bun will be exclusively available at Brown’s Hotel from 8 May, to enjoy in The Drawing Room or to take away for a moment of sweetness.
